Cornbread

Ingredients

2 cups cornmeal

¾ cup all-purpose flour

3 teaspoons baking powder

1 teaspoon salt

1 ½ cups milk

2 large eggs

5 tablespoons butter, melted

Instructions

Grease a 9-inch square baking pan or a large loaf tin. Heat oven to 200 C, Gas 6.

Melt butter and allow to cool slightly.

Combine the cornmeal, flour, baking powder, salt, and sugar.

In another bowl, whisk together the milk, eggs, and butter.

Combine the two mixtures and stir until blended.

Spoon into the prepared pan.

Bake for 25 minutes, or until a skewer comes out clean when inserted in the centre. ( if using loaf tin it will take considerably longer)
